Located in Brooktondale, NY, we specialize in making small batches of raw milk cheeses. We make different flavors of Gouda, Feta, Swiss, Asiago, and Cheddar using milk from our neighbor’s herd of jersey cows. Cheeses age anywhere from 2 to 9 months in our cheese caves and are then sold throughout our local region. You can purchase our cheeses at Brookton's Market, GreenStar on Cascadilla Street, and through the following CSA’s: Nook and Cranny, Full Plate Farm Collective, and Westhaven Farm.
